Corn, Tomato & Avocado Salad
2 cups cooked corn
1 diced avocado (1/2 in pieces)
1 pint halved cherry tomatoes
1/2 finely diced red onion
2 Tbs olive oil
1 Tbs fresh lime juice
1/2 tsp lime zest
1/4 cup chopped cilantro
1/4 tsp salt
1/8 tsp freshly ground pepper
Combine the first 4 ingredients in a large bowl.
Whisk together the last 6 ingredients. Stir into salad and serve.
