Give me blueberries & sugar & life will be okay.
This is so simple.  I was almost mad when I got the recipe finally.  Mad that I had assumed it was more complicated and had missed out for so long.  This is delish on pancakes, waffles, french toast… but would be equally as awesome on ice cream!  Mmmm… Blueberry Syrup 1 cup water 1 cup sugar 2 Tbs corn starch 1 cup blueberries 1 Tbs butter splash of lemon juice Combine...

A dude's quiche
This is not true quiche.  There is no dainty crust.  There is no cream or squash.  You will not find a dollop of anything.  In fact there is no garnish at all.  It is simply cheesy, eggy goodness.  A manly-man’s quiche. The original recipe says it serves 8.  Our family of 5 finishes this thing off. Quicky Quiche 1 package (10 ounces) frozen chopped spinach 4 eggs 2 slices fresh white...

They loved the asparagus?
Getting the family to eat asparagus is nearly impossible.  But, I found a way.  I used the juice of a whole lemon.  That was a bit too much, so I am cutting the recipe down to 1/2 a lemon.  That may even be too much.  It’s a work in progress. Lemon Asparagus 25 spears of asparagus, washed, trimmed & cut to 1” pieces juice from 1/2 a lemon 1 tsp dried tarragon pinch of salt ...

I miss you.
These are, by far, my most favorite pancakes. Ever.  This recipe makes a huge amount of good-sized cakes.  Alas, my recently acquired vegan status prohibits me from eating these little wonderful cakes of buttermilk heaven. :( Truckstop Buttermilk Pancakes 5 eggs 1 1/2 cups milk 6 Tbs butter, melted 5 cups buttermilk 5 cups all-purpose flour 5 tsp baking powder 5 tsp baking soda 1...

Egg-Free French Toast
We made this recipe for Father’s Day brunch.  Even my meat-eater hubby and kids loved it.  If I hadn’t said it was vegan, they wouldn’t have known. :)  Egg-Free French Toast 4Tbs soy flour 4Tbs tahini 1/2 cup water 1 tsp honey or maple syrup pinch of salt 6 slices whole-grain bread 1 Tbs oil (optional) Cinnamon for garnish (optional) Beat together soy flour, tahini,...

Olive and pine nut salsa
So, I made this salsa.  I put less oil in it than it called for and it was still way too oily.  Gotta remember that for next time. Spaghetti with Olive and Pine Nut Salsa 3/4 cup Gaeta olives (I used 1/2 cup black olives & 1/4 cup kalamata olives) 1/4 cup drained bottled capers1/4 cup pine nuts 1/4 cup chopped fresh flat-leaf parsley 1 tsp dried hot red-pepper flakes 1/2 cup extra-virgin...
